Zucchini Pasta

350g of pasta shapes (shells, penne etc)
1 onion, chopped
1 clove of garlic chopped
25g butter
4 large zucchini grated
175g ricotta cheese
50g cheddar cheese
salt and pepper to taste
finely chopped garlic chives

  1. Cook pasta as per instructions;
  2. In a frypan soften the onion and garlic in the butter;
  3. Add the zucchini and cook for a further 2 minutes;
  4. Add ricotta and heat gently, stirring constantly. Season to taste and stir through chives;
  5. Mix drained pasta with sauce in an oven proof dish;
  6. Sprinkle with cheddar and grill until melted.
