1 onion, chopped
1 clove of garlic chopped
25g butter
4 large zucchini grated
175g ricotta cheese
50g cheddar cheese
salt and pepper to taste
finely chopped garlic chives
- Cook pasta as per instructions;
- In a frypan soften the onion and garlic in the butter;
- Add the zucchini and cook for a further 2 minutes;
- Add ricotta and heat gently, stirring constantly. Season to taste and stir through chives;
- Mix drained pasta with sauce in an oven proof dish;
- Sprinkle with cheddar and grill until melted.
