1 1/4 cups boiling water
1 tsp baking soda
60g butter, cubed
3/4 cup brown sugar
2 eggs
1 cup self raising flour
- Turn oven to 180°C and grease and line a cake tin;
- Add dates, boiling water and bicarb soda to a bowl and let soak for 5 minutes;
- Add contents of bowl to sugar and butter in a blender or food processor;
- Process until just blended;
- Add eggs and flour;
- Process until just combined, stopping to scrape flour from sides to ensure proper mixing;
- Pour into tin and bake for 45-50 minutes, or until cooked through(i.e. skewer comes out just clean). You may want to cover with foil at the 30 minute mark if the top is getting too crisp;
- Stand for 10 minutes before turning out of tin and serving with butterscotch sauce and cream or icecream.
